A Winter Wonderland In Northern Maine USA

 A Snow Filled Winter In The Baskahegan Valley In Northern Maine  

The early pioneer families that settled in this beautiful valley would farm in the summer months, saving produce for the long winter months. During the winter months, the men took to  the forest and logging was their passion. One of the favorite trees for this endeavor was the Pumpkin Pines, which were easy to haul since they were close to the streams and other waterways. Old diaries talk about the stumps being so large that a team of Oxen could stand on the stump. At one time, Northern Maine was the logging capital of the world.

With the easy supply of lumber, you will see many beautiful mansions in Northern Maine. Take a winter tour in a horse driven buggy and see all the beautiful houses as they lay buried in the white stuff.  Just outside of the towns are resorts with skiing, snowboarding, snowshoeing, and other winter sports. Take time to enjoy winter like never before.

 Moosehorn National Wildlife Refuge In Maine Is One Of The Northernmost National Wildlife Refuges On The Atlantic  Seaboard

Moosehorn National Wildlife Refuge has activities year around. There are year around Moose Tours, where you are guaranteed to see a moose, fishing tours, ice fishing trips, hunting in the different seasons, hiking, climbing, wildlife viewing and photography. As the ponds ice over, there is ice skating, as well as near by resorts with a full range of winter activities. If you have never been in an area where you could enjoy winter to the max, you are in for many surprises.

This is a main refuge for migrating birds of all kinds. Here, they are able to feed and nest in a protected area. During different times of the year, you will see birds of prey, waterfowl,song birds and many others. If you enjoy bird watching, this is an excellent place for a bird adventure.

Can you imagine waking up and looking out the window and seeing ice crystal masterpieces that formed on the window over night? What a delight to see the creative talent of nature. If you have never seen this, you are in for a surprise.

San Diego is the southern most city before crossing the border into Mexico. She and the most northern towns on the Mexican side of the border, are blessed with one of the greatest “Treasures of the Sea,” the Sea Urchin.  This small window of the Pacific, is one of the few places in the world, where you can see the Pink or the Purple Sea Urchin.

Tuna Harbor Dockside Market In San Diego California USA

This Early Morning Fish Market Setting Up On The Dock

It is very early on Saturday Morning and it is time to head to Fish Harbor Pier located near Seaport Village. There is still some low fog hanging over the harbor. The scene is quite picturesque. The merchants at Tuna Harbor Dockside Market are still buying fish from the local fisherman. The different sellers are setting up for business. Though it is early, we join those in line waiting for the market to open. This is an open air market where the fish are right off the boat. Truly we will leave with the freshest fish in town.

Some of the boats are still unloading fish to the waiting merchants, while others are leaving the area to get their boats cleaned and their nets checked. Most of the fisherman have families that will help with the cleaning and mending of the nets, while the fisherman get a few hours sleep.

The merchant is holding a rather large Pacific Crevalle Jack (Caranx Caninus). This fish is found in the warm waters from California to Peru.

With the fish now rinsed and laid out on the table for sale, the market is now open for business. We begin to go from fishing table to fishing table. The Saturday morning regulars come early, so as to get first pick of the nights catch.

The Bright Colorful California Sheephead Fish

Because of the deep color of most of the fish on the table, we can only assume that most are at least five or six years old. All California Sheephead are born female and change to males about two-thirds through their nine year life span.

The easiest way to cook sheephead is to fillet the fish. Make an herb butter with herbs, salt, pepper,  and fresh lemon. Spread on the fish. Cook on a lightly greased pan at 400 degrees until the fish flakes from the testing fork. Should be between ten and twelve minutes.

While many do not know this fish, or how to cook it,  it is a very good fish when cooked in this way.

A Table Of  Pacific Crevalle Jack (Caranx Caninus) On Ice And Ready To Sell

This fish can be easily boned and then cubed.  Make a marinate of Ranch dressing, Worcestershire sauce, rosemary, garlic, fresh lemon juice, scallions, salt, and  pepper. Marinate for 1-3 hours in the refrigerator. Put on a pan and grill it until flakes from the testing fork. Good served with a salad.

The Pacific Red Rock Fish is different than the one found on the East Coast of America. The Pacific Red Rock Fish is usually marketed as Pacific Red Snapper, however it is not a true Red Snapper. True Red Snapper is found only in the Atlantic Ocean near Mexico.  Both fish are cooked in a similar way.

California Two-Spot Octopus

Octopus is not one of the most widely cooked fish among Europeans and Americans. It is considered a delicacy among the countries of Asia. Asian Americans are usually first inline at the fish market to bring this fish home and prepare it extremely well. Several local restaurants that specialize in fish also have Octopus on the menu. While in San Diego, you will find that there are many places that serve Octopus in extremely delicious ways. Almost every Japanese Restaurant has an Octopus dish on the menu.

Fresh Caught King Crab

Crabs are caught and are sold alive. Crab cakes are a favorite in California. You will find many fish shacks along the beach with delicious crab cakes.

California Spot Prawn/Shrimp Is A Market Favorite

If you enjoy shrimp, what could be better than fresh shrimp? Visit the Restaurant at the end of the Pier for for a large selection of shrimp entrees.  All around the park and village are fish and specialty restaurants.

People come from all over the world to taste these tiny tasty sea creatures. While at the Tuna Harbor Dockside Market, be sure to stop by the small fish shop that serves Sea Urchins in the half shell. Eating fresh out of the shell is like nothing else! It is almost like a custard, not too fishy, and a great experience.

The San Diego Pier Cafe is a San Diego landmark and has served lunch and dinner since 1980. It is a full service restaurant has a different featured local fish selection daily. The view is excellent, the atmosphere is amazing, and liquor, beer, and wine are also served.

A morning at the Tuna Harbor Dockside Market is a fun and interesting adventure. Ours was made perfect as we spent time looking at the bay. As we were watching, this little fellow came swimming by. He didn’t want to miss out on anything.

If you are in San Diego on a Saturday morning, be sure to check out the fish market on Harbor drive. The market opens around 8:30 am, but the earlier you get there , the more you will see. The line starts forming around 7:30 am. While you are there, take time to explore the park and village market place.  Lunch at the Dockside Market and dinner at one of the Harbor restaurants would be the perfect end to a perfect day. Eat at one that has nice big windows looking out over the bay. San Diego is known for it’s amazing sunsets.

In the surrounding area around the Sanxiantai Dragon Bridge there is a local fish dish which had its origins with the indigenous peoples living in the area of the bridge. The freshly pressed Mullet Roe is most often prepared with garlic and scallions. Most Taiwanese restaurants suggest pairing it with a high quality Taiwanese Beer.  Chili crab is a delightful seafood specialty straight from Singapore. The Eel is a saltwater fish found abundantly in the seas surrounding both Japan and Taiwan. This has always been a Japanese favorite and was prepared raw. Due to health concerns, raw fish is seldom served and the Eel is deliciously cooked. Because non-Asians often consider the Eel to look more like a snake, many have not tried this delicious Seafood Treasure. But rest assured that the Eel is indeed a Saltwater fish and is quite tasty. If you are in either Taiwan or Japan, be sure to order this seafood treat.

Crab Cakes Are A Favorite From  San Diego, California USA

In San Diego, you will find Crab Cakes everywhere from the local beach food shack to the elite dinner houses on the San Diego Bay. Crab Cakes are prepared with fresh crab and fried. They are usually paired with a generous amount of fresh steamed vegetables.

 Clam Chowder And Sour Dough Bread Is A Favorite Of The Pacific North West USA

Sour dough is a type of leavening where a starter is made and allowed to bubble and sour to form a fresh yeast.  This starter is then always used, except for the last cup. A cup of flour is added and the new starter is put back in the starter jar and the lid put on tight. Each time it is used, it is always replenished. It is quite common for restaurants and country homes to each have their own starters. The bread that is made is called “Sourdough” and it extremely tasty.

Both Razor and Butter Clams are plentiful in the Pacific North West. Because these are so plentiful and fresh, they are usually used for making fresh Clam Chowder. The West Coast has around 500 varieties of clams, though only about 50 of them are well known. Each local area has it’s own secret chowder recipe, and it’s own favorite clam. Some like the broth thick and others thin.  Those wanting a thick soup use a cream to make the soup broth, instead of straight milk. If traveling on the Pacific Coast, take time to stop in several different areas and taste some of the different recipes. We are sure you will be pleasantly surprised.

This is just a few of our well loved sea food delights from around the world. When traveling to coastal areas and island nations, take time to discover some of the local fish delicacies of the area. Each area or country will have it’s own signature dishes and you will want to try as many as you can. There is nothing that fills in the stories of a people, more than the special dishes that only they are known for. Enjoy your food adventure. The Church Of The Annunciation In Nazareth, Israel

The Church of the Annunciation, according to tradition, is the site where the Angel Gabriel spoke to Mary in Nazareth, Israel, announcing that she would bring forth a child. The site where the church is located is over the area of what is believed to be the house of Mary. The Biblical text of the annunciation is found in Luke 1: 26-38.

“And in the sixth month the angel Gabriel was sent from God unto a city of Galilee, named Nazareth, To a virgin espoused to a man whose name was Joseph, of the house of David; and the virgin’s name was Mary. And the angel came in unto her, and said, Hail, thou that art highly favoured, the Lord is with thee: blessed art thou among women.  And when she saw him, she was troubled at his saying, and cast in her mind what manner of salutation this should be. And the angel said unto her, Fear not, Mary: for thou hast found favour with God. And, behold, thou shalt conceive in thy womb, and bring forth a son, and shalt call his name JESUS. The History Of The Church Of The Annunciation

Archaeological  excavations of this site have revealed the earlier constructions of four churches. During the mid 4th Century CAD there was evidence of what might have been an altar in the Grotto, which is thought to have been the home of Mary. This would have been the earliest of the churches.

The Church of the Annunciation was commissioned by Emperor Constantine. There is historical evidence to show that it was most likely directed by his mother, Saint Helena. There is also a motif that seems to support the idea that the church was founded by Deacon Canon from Jerusalem. The church was most likely completed in the year of 470 AD. This building was completely destroyed in 638 AD by the Arab invasion.

In the year 1109 the Crusaders arrived in the Holy Land and began a new church on this same site. A little more than a thousand years latter, this beautiful church was once again destroyed.

The Franciscans built a new church on this same site in 1730. It was latter enlarged in 1877. This church was demolished in 1955 to make way for this latest building.

The current building was completed in 1969. It was designed by one of the world’s greatest designers, Giovanni Muzio. There has been an ongoing problem since 1997, when a mosque was built in front of the current church.

Notice the beautiful paintings surrounding the altar area depicting scenes from Biblical times. There are many historic motifs and statues.

These caves are believed to be the home of Mary. Tradition says that this is the place that the Angel  appeared to the Virgin Mary.

Part Of The Archaeological Excavations From Several Digs

Around the current church you can see several different digs that has unearthed parts of churches, and even a Roman village. So far they have unearthed walls, houses, silos, and cisterns which were part of the village services.

Nazareth was the childhood hometown of Jesus of Nazareth. It is here in Nazareth that he grew and was nurtured as a youth. Joseph was a carpenter and he would have worked with him in the carpentry shop.

Using Crypto To Travel Part II

When we first wrote about traveling while using crypto around seven months ago it didn’t get much traction, but it continued to be viewed hundreds of times later on. With Steemit being searchable by google we started seeing allot of data from our website, and other social media showing interest in the subject. Since habits can change along with crypto changes and travel we thought it was time to explain what is still working for us.

Since we have been using STEEM, Bitcoin, and other crypto currencies for travel for some time we felt it was time to mention how things have been going for us now. Using crypto currency requires some forward thinking and additional thought, but by doing so can allow you to travel at lower cost, and more often if you use some additional tips. We are entering a new era in travel and many people are not even aware what they can or cannot due yet.

“You Need a debit card that allows you bitcoin to rise or reduce in value.”

The number one most useful items is by far the shift card, and connecting it to Coinbase. The reason is very simple, and bitcoin rising is that reason. See Coinbase allows the shift card to access your account and your account is always changing. This year has seen a tremendous rise in the purchase power of Bitcoin, and thus allowed us to increase our travel quality, and standard of living. Overseas there will be others, and you need to leverage these opportunities carefully. Another example would be using Bitpay to lock in some purchasing power at a new high or using the gift card angle below. Remember imagine what you think you will need, and plan into the future.

Bitcoin has been the most useful, and has been tested with the following ways.

1. Using debit card from Shift or bitpay and some prepaid cards from coinsbank.

2. Buying gift cards for a particular services.

3. Using online travel with cheapair.com

4. Bitcoin ATM’s when you have no other choice but to use cash.

5. Using Hotels.com to purchase hotels and as a reward system.

6. Converting STEEM and SBD into bitcoin also has supported, and financed some of the interest earning to continue moving forward.

We have also heard of some success using the Game Stop gift card to buy other gift cards inside the store. We have asked Walmart management about using their gift card to buy other gift cards and they said yes. However Walmart prevents us from buying more than $10 on the Gyft App.

With all of the new options, and with Bitcoin, and other alt-coins rising your ability to leverage this for your future is growing as well. Think, plan, and prepare, and you can visit and see amazing places, and meet wonderful people.

 Candied olives: A Taiwanese Specialty

Candied olives are a Taiwanese delicacy. This specialty dates back to their Chinese culinary history. The Chinese love their olives. Chinese olive varieties are primarily cultivated for their quality in making jams and candy. They also make dried fruits and nuts. Unlike the Mediterranean, they are not known for making oil. They are preserved or cured in the same way as olives are in the western world. After the olives are preserved or cured, they are then candied and dried. Olives are often paired with goat cheeses, cured meats, and different varieties of seafood. They are commonly eaten with fresh herbs, such as garlic, rosemary, thyme, and cumin. Candied olives are eaten alone or as part of a desert. They even provide a healthy snack throughout the day!

The main difference between most Asian olive growers is whether a variety is suitable for fresh eating or only used for processing. Any of the many varieties can be used for candied olives. Candied olives are usually an acquired taste. Few children are born asking for olives. But in Asia, young children desire their favorite olive. They are considered a delicacy in Taiwan and most of Asia. They are a sweet treat! They are delicious! They are healthy!

What does history tell us about this humble fruit? Back in ancient time, the Olive tree held deep respect in all the ancient lands. During the time of Moses, the Israelites who would agree to work on the cultivation of the olive trees were exempted from serving in the military. Throughout classical literature, olives have always been a symbol that stood for goodness and purity. The ancient Israelites, not only used the oil of the olive for food, but they also burnt its oil in the Temple. Closer to modern times, we see the olive leaf used in the crown for the winning Olympic contestant.

In many countries a dinner is not complete without a bowl of olives on the table. Spain, Italy, Morocco, France, Lebanon, and Syria eat olives daily. Olives are very abundant, cheap,and almost everyone knows someone with an olive tree. They come in many varieties and colors. Some are pink, green, or black. In Morocco, almost every restaurant serves a bowl of olives with the meal. The only surprise is the variety and color that they may be!

The amazing olive tree is given credit for the overall health of the people who live in the Mediterranean region. They cook with the oil, that is so healthy and easy to use. They eat the freshly cured olives served on the table daily. They use the candied olives for desert. They use the leaves for many things, including medicinal purposes. The leaves of the olive tree are a lesser know usage, but are perhaps the most important of all. The olive leaf is a traditional medicinal herb known to be used clear back in ancient times. The therapeutic value of the olive leaf and it’s uses date back centuries. In Morocco, infusions are given to those suffering from Diabetes and those needing to lower the blood sugar quickly. This remedy has been written up in medical journals and is well documented.

Olives and the Olive Tree are considered to be antibacterial, antiviral and antifungal. They are used in the Mediterranean countries to cure infections inside the body. Eating olives is known also to help us burn body fat more efficiently. All forms of the olive is good. Have you had your daily olives today?

In Traditional Chinese medicine, all parts of the olive are used for medicinal purposes. Followers of traditional medicine like to use good quality olives in a variety of ways. They believe that the olive fruits are extremely useful as an anti-inflammatory and for their detox properties. Olives are also used to relieve sore throats, chronic coughs, and fever. Olives are easy to candy and can be used like candy when you have a sore throat or cough.

Throughout the East, olives are used for therapeutic purposes. They are often seen in regional folklore and many schools of traditional medicine. Eastern doctors have been known to use them to reduce blood sugar, cholesterol, and uric acid. Because the fruit is bitter, the oil is usually used cured or candied. It has also been used to treat diabetes, hypertension or high blood pressure, inflammation, diarrhea, respiratory and urinary tract infections. Other things olive oil is used for are stomach and intestinal diseases, asthma, hemorrhoids, rheumatism, as a laxative, and a mouth wash. While not much research has been done on Olive oil by Western scientists, much has been done in the East. World wide, there are those that use it attest to its healing qualities.

Because the olive is so bitter, people often use them as table olives, candied for a desert, or as Olive Oil. That is by far the most common way to use olives, with over 90% of the olive market going for the production of oil. For those of you who like to cook, an easy desert recipe is included below. I would suggest going to an olive bar and experimenting with different varieties of olives.

Following is a basic recipe for candied olives. The suggested variety is Kalamata olives. Try different varieties until you find the one you enjoy the most.

 Candied Olives

1 cup pitted Kalamata Olives
2 cups water
2 cups sugarMethod

Place Kalamata olives in a medium pot, add 2 cups of water. Bring to a boil; cook 2 minutes, then strain the olives. Repeat the process 6 times, with a fresh two cups of water each time.

Now for the seventh round of cooking, place the olives in the pot. Add 1 quart water and 2 cups sugar. Bring to boil and cook 5 minutes. Turn off heat and let cool. Place in a container and let sit overnight in the sugar-water.

The next day, remove olives from water and place on a parchment-lined cookie sheet. Spread out, sprinkle sugar enough to cover each olive. Shake pan to coat olives evenly. Then place cookie sheet on the floor of the oven until dry and crispy. The heat from the pilot light will slowly dry the olives. (For those without a pilot light, you can dry on a cookie sheet in the sun on the table or outside. Just think outside the box, and you will surprise yourself with a new treat for the cold winter months.)

For those of you who are looking for something really special and unique, with a touch of sweetness, healthy, but not outrageous, how about satisfying your sweet tooth with Castelvetrano Olives? The following recipe is for those who can not spend a lot of time in the kitchen, but want something unique and pleasing to the taste buds.

 Candied Olives

Ingredients

28 Castelvetrano Olives
1/4 cup cane sugar
1/4 cup fresh lemon juice
1/4 cup water
2 tablespoons cane sugar, to sprinkle

Method 

Preheat oven to 300. Pit and halve olives. Select olives that are firm and fresh-looking for best results.

Over medium-low heat combine olives, cane sugar, lemon juice, and water in a small saucepan. Stir vigorously until the sugar is fully dissolved. Note: Your results and cooking time will vary based on your stove and the thickness of your cookware. If the mixture looks over-active, remove the pan, set heating element to a lower temperature, and resume cooking.

Keep a watchful eye as the syrup begins to thicken. Once you can pass your spoon through the liquid and count 2 full seconds before it closes up afterward the olives are ready for finishing.
Carefully pour the olives and syrup onto a prepared baking tray. Spread evenly and sprinkle with remaining cane sugar. Bake for 30 minutes or until olives are firm and the syrup is thick.
Remove and let cool. These will keep in the fridge for a week…if they last that long!
So what do those do who have just made Awesome Candied Olives, only to find that they do not like them sweet? Yes, it is an acquired taste. Like many other things throughout Asia, you either love them or you hate them. Table olives are a delicious option, but eventually they too can get tiring. So give your taste buds a special treat.

Following is an awesome olive spread for pizza and then top it with chopped garlic and basil. This pizza is the best of both worlds. It is quick, it is easy, and it is healthy.

BLACK OLIVE SAUCE ARAB STYLE

Ingredients

½ kilo fresh tomatoes, peeled and chopped

1 large onion, finely sliced

3 cloves garlic, finely chopped

200 gr black olives, pitted and sliced

1 tbsp capers

1 tsp cayenne pepper

½ tsp chilli powder

½ tsp paprika

dash of Tabasco

olive oil

 Method

Heat olive oil in a pan and add the onion. Fry until it is transparent then add the garlic.Fry over a low heat for 5 mins.

Add all the other ingredients and stir well. It may need a little water, but not much. Bring to the boil then turn the heat down to very low and simmer for 20 mins.

Serve on pizza and top with garlic and fresh basil. If you like, add fresh chopped coriander leaves as a garnish. Why not serve Candied Olives for desert? One day you may wake up and find you can’t live without them.

It really is completely impossible to eat too many olives. Freshly cured olives, extra virgin olive oil and olive leaves are very much a part of the daily diet of the Mediterranean area. Medical research throughout the Western nations is showing that eating olives in any form is beneficial for good health. Many are finding that eating olives or olive oil can even help older woman prevent those dreaded wrinkles. Some scientists are now suggesting that it may slow the aging process, and that it may even help stop hot flushes in menopausal women. That in itself would be enough to help some learn to like candied olives. The nice thing about candied olives is that you can snack on them throughout the day. Then at lunch you can make an olive pizza, and for dinner why not have a large dinner salad with olive oil drizzled across the top. Garnish your salad with table olives. And while you watch TV, why not have some more of those delicious candied olives? Stay young, stay healthy……. the olive way!

Have you ever considered embarking on an olive adventure? Taiwan is a small island, but there are so many different cultures. Each family has their favorite family recipe. Even within the same ethnic group or tribe, each family has their own variation. Candied olive recipes are held close to the heart. Rarely will someone tell you the recipe, but they love to share the results. As you travel from the North to the South the style and recipes will change. You may even walk across the street and find your all time favorite.

Asians are very health conscious as a people, and you do not see as many treats dripping in sugar, as in the west. For this reason it should not be a major surprise to see the humble olive as the star on the desert table. Check out the many local buffets as you travel through the island, the you will see many different types of olives used to make these delicious treats. If at first they are not a favorite, don’t give up! One day you will find the perfect candied olive for your taste buds. Candied olives delicious! They are healthy and unique! Try them, you may love them!

For those who want to try the real thing—-we will see you in Taiwan! There is no perfect time to travel to Taiwan, the weather is nice year around. If you want to participate in a particular festival, then make your reservations far ahead. Those are the busy times. Especially things like New Years and The Dragon Boat races can make accommodations hardier to find. If traveling during these times, just think ahead and make those reservations early.

A Culinary Adventure In Istanbul Turkey

 Baklava With A Turkish Touch,  Keşkül ~ Turkish Almond Pudding, And  Şekerpare 

Almost everyone knows what Baklava consists of? But have you had it with a Turkish Touch? Throughout the Middle East; the Caucasus, which is a region at the border of Asia, Europe, the Black Sea,  and the Caspian Sea, and of course modern day Turkey, comes a wide variety of Baklava. Traditional Baklava by nature, is over sweet, made with walnuts and phyllo dough, and then it is soaked in honey.  When you are sure there is no version that is a favorite among the many recipes, you encounter Turkish Stlye Baklava. In Turkey, you will see that pistachios  are usually used instead of the traditional walnuts. There are also several other small changes made from the other recipes. The end result is amazing.  This is the king of the Baklavas.

Then there is the discovery of Keşkül, an almond pudding made with milk, coconut, and pistachios. It is usually served in a special bowl with a spoon. Sprinkled on top are coconut flakes and pistachio pieces. The name, itself, has an interesting story behind it.  In the time of the Ottoman Empire, this was the name of a special bowl that lodges used for begging money, so that the lodge could make this special pudding. The pudding was then served in these same bowls and given to the poor.  This special desert is served in these same bowls even today.

Our next major desert is  Şekerpare . It is by far the favorite among the Turkish people and is so easy to make. In a nut shell it is an almond pastry that is dipped in a a very thick lemon flavored syrup. This is simple and delicious.

The Above Delicacies Are Best When Served With a Big Cup Of Turkish Coffee

There is coffee and then there is Turkish coffee. The difference is in how it is made.

The Traditional Way To Make Turkish Coffee

It is made by taking ground unfiltered fresh Turkish coffee beans and boiling them over the lowest heat till they froth. It is then served and the remainder goes back on the cooking area till it froths a second time and then another serving is made.

Now this is coffee!

Taking your time to wander the side streets of Istanbul, Turkey as well as the major will render many such vendors as the one in the photo. It is easy to grab a bite of lunch as you check out monuments, museums, and other places of interest. In Turkey, like all of the Middle East, there is little reason for going hungry.

Relaxing With Food And Friends

How do you end that perfect day? You have met new friends and you just want a bite before returning to your hotel, as dinner will be latter.  Why not visit one of the small eateries and have a snack with with Turkish coffee.  Good conversation and coffee, seem to just go together.
